Serve 4 | Preparation Time: 15 Minutes | Refrigeration: 1 hour

Ingredients needed for the Recipe |

1 packet of “cigarette” biscuits                           

For the filling:

20 cal of milk                                                                      15 g of flour

50 g of granulated sugar                                                15 g of corn flour

2 eggs                                                                    1 very strong espresso or 1 tbsp of coffee extract

30 g of shelled unsalted pistachios                           30 g of candied ginger   

STEP BY STEP:

Step 1:  Heat the milk in a small saucepan.

Step 2: At the same time, use an electric mixer to beat the eggs with the sugar, coffee, flour, and corn flour, until the mixture becomes white.

Step 3: Slowly, pour in the hot milk, continuing to beat the mixture. Next, place the mixture in a saucepan on the stove, and let it heat for about 5 minutes while stirring with a wooden spoon, until it thickens.

Step 4: Let the mixture cool.

Step 5: Chop the pistachios and candied ginger roughly and add them to the cooling cream. Let it cool in the refrigerator for at least 1 hour.

Step 6: Pour the cream into a piping bag and fill the hole in each cigarette biscuit with cream.

TIPS:

You may prepare the cream the night before serving, but do not fill the cigarettes biscuits until just before serving, so that the cream does not soften the biscuits.

You should try serving this treat to children with creamy hot chocolate too.
